Pumpkin Chocolate Chip Pancakes (Dairy Free!)


My girls and I love this recipe! It's easy and a perfect breakfast treat for Fall, my favorite season. Makes 12 pancakes!

4 eggs
1 banana, mashed
1/2 cup pumpkin
2 T. coconut oil
pinch cardamom
pinch ginger
1 t. cinnamon
2 T. coconut flour
handful of Enjoy Life dairy-free chocolate chips

1. Heat large skillet on medium heat.
2. Add coconut oil (I use the coconut oil spray from Trader Joe's).
3. Mix together wet ingredients.
4. Then add cardamon, ginger, cinnamon, coconut flour to the wet ingredients. Continue to mix well.
5. Pour batter onto skillet. Sprinkle chocolate chips onto each pancake. Let sit for a minute or two, until batter becomes bubbly, and flip.
6. Serve and enjoy!
